Nasa's helicopter Ingenuity runs a Linux operating system which software "fprime" has been open sourced by Nasa. Most of the code is C++ but the library contains also some files and scripts in Python. Pip is needed to install the software!

Ground Data System (GDS)
Here they use Python, Flask, Javascript, HTML and CSS.
So this Flask app is frontend for interact with embedded systems.
Nasa Wrote:A GDS is the “Ground Data System” that supports large-scale embedded systems by allowing operators to interact with the embedded system.
This system is typically used with spacecraft to facilitate control and monitoring of those systems’ flight software.
Any data being sent from a ground computer to the spacecraft, or vice versa, has to passes through a GDS

For smaller stuff that need GUI the use wxPython.

It seems to me that the altimeter curve that proved the success of the first flight on mars is a matplotlib.pyplot window https://www.youtube.com/watch?v=4qO9321TxBY&t=2273s see at 37:53 in the video.
